RESUMO As propriedades mecânicas de produtos agrícolas são fundamentais para o correto desenho de projetos ou dimensionamento de equipamentos de processamento e estabelecimento de parâmetros sobre a carga suportada. Para avaliar o efeito da secagem com intermitência, foi montado um experimento em delineamento inteiramente casualizado, com cinco tratamentos (secagem contínua e intermitente com 4; 8; 12 e 16 h de repouso) e quatro repetições. Os grãos de milho, cultivar Cargo TL, foram colhidos com teor de água de 25.37% b.u., submetidos a secagem em um secador experimental de camada fixa, ajustado à temperatura de 100 ºC e fluxo de ar de 1.5 m3 min-1 m-2. A secagem decorreu até que os grãos atingissem o teor de água de 14±0.3% b.u. Para a secagem intermitente o processo foi interrompido com 18±0.2% de teor de água b.u. e prosseguiu após o repouso, até atingir o teor de água final. Para a análise foram selecionados aleatoriamente 10 grãos por repetição e submetidos ao teste de compressão uniaxial depois de determinar as suas dimensões. Avaliou-se a força de ruptura, deformação máxima, energia consumida até o ponto de ruptura, módulo de tenacidade, dureza e taxa de redução da água durante a secagem. Concluiu-se que, o aumentou do tempo de repouso promoveu um aumento linear nos valores da força de ruptura e dureza; o módulo de tenacidade, energia e deformação não foram afetados pelo tempo de repouso; o aumento do tempo de repouso contribuiu para o aumento da taxa de redução da água.

ABSTRACT Mechanical properties of agricultural products are essential for a proper project design or processing equipment dimensioning, as well as for establishment of parameters on the supported load. An experiment was set up in a completely randomized design, with five treatments (continuous and intermittent drying under 4, 8, 12, and 16 h of rest period) and four replications, to evaluate the effect of intermittent drying. Corn kernels of the cultivar Cargo TL were harvested with a moisture content of 25.37% wb and submitted to drying in an experimental fixed bed dryer set to a temperature of 100 °C and an airflow of 1.5 m3 min-1 m-2. Drying was performed until the kernels reached a moisture content of 14±0.3% wb. The process was interrupted in the intermittent drying with a moisture content of 18±0.2% wb and continued after rest period until the final moisture content was reached. The analysis consisted of 10 kernels randomly selected per replication and submitted to the uniaxial compression test after determining their dimensions. Rupture force, maximum deformation, energy to rupture point, modulus of toughness, hardness, and drying rate during drying were evaluated. The increase in rest period promoted a linear increase in the rupture force and hardness. Modulus of toughness, energy to rupture point, and maximum deformation were not affected by the rest period. The increase in rest period contributed to increasing the drying rate.

Resumo: A temperatura do ar empregado no processo de secagem pode determinar a qualidade fisiológica inicial e o potencial de armazenamento de um lote de sementes, sendo esse o objeto de estudo desta pesquisa. Sementes de cártamo, colhidas com teor de água de 25,8%, foram submetidas à secagem em secador experimental às temperaturas do ar de 40, 50, 60 e 70 °C, até atingirem grau de umidade de 6,6 ± 0,6%. De imediato à secagem e a cada 60 dias subsequentes, até 240 dias de armazenamento sob condições não controladas, foram coletadas amostras de sementes para a determinação da qualidade fisiológica. O aumento da temperatura do ar de secagem resultou em maiores taxas de remoção de água, promovendo danos imediatos e latentes à qualidade fisiológica das sementes, evidenciados pela redução da porcentagem e velocidade da protrusão radicular, primeira contagem e germinação, sobretudo com as temperaturas de 60 e 70 °C. Para a manutenção da germinação e vigor das sementes de cártamo até os 240 dias de armazenamento, recomenda-se que a temperatura do ar de secagem não exceda a 40 °C, especialmente quando essas se apresentarem com teores de água próximos ou superiores a 25,8% no momento da secagem.

Abstract: The air temperature used in the drying process can determine the initial physiological quality and storage potential of a seed lot, which is the object of this study. Safflower seeds, harvested at a moisture content of 25.8%, were subjected to drying in an experimental dryer at air temperatures of 40, 50, 60 and 70 °C until reaching a moisture content of 6.6 ± 0.6%. Immediately upon drying and every 60 days after that, up to 240 days of storage under uncontrolled conditions, seed samples were collected to determine physiological quality. Increasing drying air temperature resulted in higher water removal rates, promoting immediate and latent damage to seed physiological quality, evidenced by the reduction in the percentage and speed of root protrusion, first count, and germination, mainly at temperatures of 60 and 70 °C. For the maintenance of safflower seed germination and vigor up to 240 days of storage, it is recommended that drying air temperature does not exceed 40 °C, especially when seeds present moisture contents close to or higher than 25.8% at the drying moment.

Resumo: As sementes de cártamo apresentam dormência logo após a dispersão da planta-mãe, tornando inviável a semeadura de sementes recém-colhidas. Desse modo, objetivou-se com o presente estudo avaliar a superação da dormência das sementes de cártamo durante o armazenamento associado com a utilização de diferentes períodos de estratificação a frio. As sementes, com teor de água de 7,2%, foram armazenadas por 0, 60, 120, 180 e 240 dias e, a cada período de armazenamento, foram submetidas à estratificação durante 0 (controle), 1, 2, 3, 4, 5, 6 e 7 dias, a 10 °C e em ausência de luz. Após a estratificação, as sementes foram submetidas ao teste de germinação e avaliadas quanto à porcentagem de protrusão radicular, índice de velocidade de germinação e porcentagens de primeira contagem e contagem final de plântulas normais. As sementes de cártamo superam gradualmente a dormência durante o armazenamento por 240 dias em ambiente não controlado. O armazenamento associado aos períodos de estratificação a frio durante 5 a 7 dias promovem o aumento da germinação, sendo eficientes para a superação da dormência fisiológica das sementes de cártamo.

Abstract: Safflower seeds exhibit dormancy soon after dispersion from the mother plant, making it impossible to sow newly harvested seeds. Thus, the aim of the present study was to evaluate breaking the dormancy of safflower seeds during storage associated with the use of different periods of cold stratification. Seeds with a moisture content of 7.2% were stored for 0, 60, 120, 180, and 240 days, and for each storage period, they were stratified for 0 (control), 1, 2, 3, 4, 5, 6, and 7 days at 10 °C in the dark. After stratification, seeds were subjected to the germination test and evaluated for percentage of root protrusion, germination speed index, and percentages of first count and final count of normal seedlings. Safflower seeds gradually overcome dormancy during storage for 240 days in a non-controlled environment. Storage associated with periods of cold stratification for 5 to 7 days lead to an increase in germination and are effective in breaking the physiological dormancy of safflower seeds.

Resumo: O presente trabalho teve como objetivo avaliar o potencial fisiológico de sementes de soja provenientes de duas épocas de semeaduras, em diferentes estádios de maturidade, submetidas a diferentes temperaturas de secagem. As sementes foram colhidas nos estádios de maturação R7, R7 + 2, R7 + 3, R7 + 5, R7 + 6, R7 + 7, R7 + 10 e R7 + 12 dias (55, 50, 45, 40, 35, 30, 25 e 20% de teor de água). Para cada estádio, houve a separação das sementes em três partes, sendo uma diretamente submetida à avaliação do potencial fisiológico, e as outras secas a 40 °C e 50 °C, até atingirem o teor de água de 11,5%. O potencial fisiológico foi avaliado pela germinação, primeira contagem, envelhecimento acelerado, frio modificado, condutividade elétrica e emergência. O máximo potencial fisiológico é alcançado com 55% de teor de água, momento onde o acúmulo de massa seca é máximo. As sementes tornam-se tolerantes à dessecação próximo ao estádio R7 + 7 dias (30% de teor de água). Germinação e vigor das sementes de soja reduzem com o aumento da temperatura de secagem de 40 °C para 50 °C, sendo o efeito potencializado quando os teores de água estão acima de 30%.

Abstract: This study evaluated the physiological potential of soybean seeds harvested during two seasons, on different maturation stages and subjected to different drying temperatures. The seeds were harvested at the maturations stages R7, R7 + 2, R7 + 3, R7 + 5, R7 + 6, R7 + 7, R7 + 10 and R7 + 12 days (55, 50, 45, 40, 35, 30, 25, and 20% of moisture content). For each maturation stage, seeds were divided into three samples: one sample was used to directly evaluate the physiological potential, and the others were dried at 40 °C and 50 °C, until reaching the moisture content of 11.5%. The physiological potential was evaluated through germination test, first germination count of germination, accelerated aging, modified cold, electrical conductivity and seedling emergence. The maximum physiological potential of seeds is achieved at the moisture content of 55%, the point that the dry matter is maximum. The seeds became tolerant to artificial drying approximately at the stage R7 + 7 days (30% of moisture content). Germination and vigor of the soybean seeds reduce as the drying temperature is increased from 40 °C to 50 °C, and this effect is enhanced when the seeds show moisture contents above 30%.

RESUMO Este trabalho teve por objetivo ajustar modelos matemáticos aos dados experimentais da secagem dos frutos de amendoim em camada delgada, submetidos a diferentes temperaturas do ar de secagem. Foram utilizados frutos de amendoim da cultivar IAC 505. Os frutos de amendoim foram submetidos à secagem em estufa de ventilação forçada com diferentes níveis de temperatura (40; 50; 60 e 70 ºC). Aos dados experimentais foram ajustados dez modelos matemáticos tradicionalmente utilizados para representação da cinética de secagem em camada delgada. Baseado nos resultados encontrados, conclui-se que dentre os modelos ajustados aos dados experimentais, o modelo de Page foi o escolhido para representar o fenômeno de secagem em camada delgada dos frutos de amendoim. O coeficiente de difusão efetivo aumenta com a elevação da temperatura, e a sua relação com a temperatura de secagem pode ser descrita pela equação de Arrhenius. As propriedades termodinâmicas entalpia e entropia tiveram seus valores reduzidos com aumento da temperatura do ar de secagem, enquanto que os valores da energia livre de Gibbs aumentam com o aumento da temperatura.

ABSTRACT The aim of this study was to fit mathematical models to the experimental data from the thin-layer drying of peanut fruit subjected to different drying-air temperatures. Peanut fruit from the IAC 505 cultivar were used. The peanut fruit were subjected to drying in a forced ventilation oven at different temperature levels (40, 50, 60 and 70 ºC). Ten mathematical models, traditionally used to represent the kinetics of thin-layer drying, were fit to the experimental data. Based on the results, it can be concluded that among the models adjusted to the experimental data, the Page model was chosen to represent the phenomenon of thin-layer drying in peanut fruit. The effective diffusion coefficient increases with the rise in temperature, and its relation to the drying temperature can be described by the Arrhenius equation. The values for the thermodynamic properties, enthalpy and entropy, were reduced with the increasing temperature of the drying air, while the values for Gibbs free energy increased with the increase in temperature.

Resumo: A secagem de sementes permite reduzir o teor de água a níveis adequados para o armazenamento. Porém, cuidados com as temperaturas aplicadas no processo são necessários para evitar danos às sementes submetidas à secagem. O trabalho foi realizado com o objetivo de avaliar o efeito de diferentes temperaturas de secagem e do armazenamento sobre o crescimento de plântulas de soja. As sementes foram colhidas com aproximadamente 23% de teor de água, e submetidas a diferentes temperaturas de secagem (40, 50, 60, 70 e 80 °C) até atingirem 12,5 ± 0,7% (b.u.), sendo posteriormente armazenadas, em ambiente não controlado, durante 180 dias. A cada 45 dias foi realizado o teste de germinação e as avaliações referentes ao desempenho de plântulas, determinando-se os comprimentos total, do hipocótilo e da raiz, e ainda verificando suas respectivas massas de matéria seca. Com base nos resultados pôde-se concluir que: a) o aumento da temperatura do ar de secagem afeta a qualidade fisiológica das sementes, sendo esse efeito potencializado com o tempo de armazenamento, principalmente sobre o comprimento da raiz; b) a temperatura do ar de 40 °C pode ser recomendada para a secagem de sementes de soja, sendo associada ao período de armazenamento de 180 dias em condições não controladas.

Abstract: Drying of seeds reduces their moisture content to levels appropriate for storage. However, care in the temperatures applied in the process is necessary to avoid damage to the seeds that are dried. The aim of this study was to evaluate the effect of different drying temperatures and storage on the growth of soybean seedlings. Harvested with a moisture content of approximately 23% (w.b.), the seeds were dried at different temperatures (40, 50, 60, 70, and 80 °C) until reaching moisture content of 12.5 ± 0.7% (w.b.), and they were subsequently stored for 180 days in an environment without climate control. A germination test and evaluations of seedling performance were carried out every 45 days, determining the full length of the seedling and hypocotyl and root lengths, along with their respective dry matter weights. The results showed that: a) the increase in the temperature of drying air affects the physiological quality of soybean seeds, and this effect is accentuated over time, especially on root length; and b) the air temperature of 40 °C can be recommended for drying of soybean seeds in association with the storage time of 180 days under storage conditions without climate control.

Resumo: O presente trabalho foi conduzido com o objetivo de avaliar os efeitos, imediato e latente, de diferentes temperaturas do ar de secagem sobre o potencial fisiológico de sementes de amendoim (Arachis hypogaea L.). Os frutos foram colhidos no estádio de maturidade fisiológica, com aproximadamente 36 ± 2% de teor de água (b.u.), e submetidos à secagem nas temperaturas de 40, 50, 60 e 70 °C, até atingirem 7 ± 1% (b.u.). Posteriormente, esses foram armazenados em ambiente com temperatura e umidade relativa não controladas por 150 dias, sendo imediatamente e a cada 30 dias subsequentes determinado o teor de água, a germinação e o vigor das sementes por meio da primeira contagem e dos testes de tetrazólio, envelhecimento acelerado, frio com solo e condutividade elétrica. De acordo com os resultados obtidos, verificou-se que o potencial fisiológico das sementes de amendoim diminui com o aumento da temperatura de secagem e com o tempo de armazenamento, posto a germinação e o vigor das sementes serem diminutos conforme o incremento de ambos os fatores. A temperatura do ar de 40 °C pode ser recomendada para a secagem de sementes de amemdoim, sendo associada ao período de armazenamento de 150 dias em condições não controladas.

Abstract: This study was performed to evaluate the immediate and latent effects of drying air temperature on the physiological potential of peanuts (Arachis hypogaea L.). The fruits were harvested at the physiological maturity stage, with 36 ± 2% water content (w.b.), and dried at temperatures of 40, 50, 60 and 70 ºC, until 7 ± 1% (w.b.). Thereafter, the fruits were stored in an environment with non-controlled temperature and relative humidity for 150 days, and the water content, germination and vigor of seeds were immediately determined, as well as at every 30 days thereafter, through the first count, and the tetrazolium test, accelerated aging test, cold test with soil and electrical conductivity. According to the results, it was found that the physiological potential of peanut seeds is inversely related to the drying temperature and the storage time, due to the fact that the germination and vigor are reduced as both factors increase. The air temperature of 40 °C may be recommended for the drying of peanut seeds, and even associated with the storage time of 150 days under uncontrolled conditions.

RESUMO A secagem de produtos agrícolas reduz o teor de água a níveis adequados para o armazenamento, visando à manutenção da qualidade do produto. Porém, cuidados especiais com as temperaturas aplicadas no processo são importantes para a integridade e longevidade do material. Objetivou-se determinar o efeito imediato e latente de temperaturas do ar de secagem sobre a qualidade de soja produzida em segunda safra. Os grãos foram colhidos no estádio R8, próximo à maturidade fisiológica, com teor de água de, aproximadamente, 23 % (b.u.), e foram submetidos a temperaturas de secagem de 40 ºC, 50 ºC, 60 ºC, 70 ºC e 80 ºC, até o teor de água de 12,5 ± 0,7 % (b.u.), sendo, posteriormente, armazenados em ambiente com condições de temperatura e umidade não controladas, durante 180 dias. A cada 45 dias subsequentes, a qualidade foi avaliada por meio de determinação da perda de matéria seca, coloração e teores de proteína bruta e de lipídios e pelos índices de acidez e de peróxido do óleo bruto extraído. Com base nos resultados obtidos, conclui-se que o aumento da temperatura do ar de secagem influencia na qualidade da soja e do óleo bruto extraído, sendo esse efeito potencializado com o tempo de armazenamento; a qualidade da soja e do óleo bruto se reduzem conforme o incremento na temperatura do ar de secagem e no tempo de armazenamento; a temperatura do ar de 40 ºC é a que menos afeta a qualidade dos grãos de soja e do óleo bruto extraído.

ABSTRACT Drying agricultural products reduces the moisture content to suitable levels for storage, in order to maintain the product quality. However, special care with the temperatures applied in the process is important for the integrity and longevity of the material. The present study aimed at determining the immediate and latent effect of air-drying temperatures on the quality of soybean produced as a second season crop. The grains were collected at the R8 stage, close to the physiological maturity, with moisture content of approximately 23 % (w.b.), submitted to drying temperatures of 40 ºC, 50 ºC, 60 ºC, 70 ºC and 80 ºC, up to a moisture content of 12.5 ± 0.7 % (w.b.), and then stored under non-controlled humidity and temperature for 180 days. Thereafter, quality was assessed every 45 days by determining the dry matter loss, color and crude protein and lipid contents, as well as the acidity and peroxide indices of the crude oil extracted. Based on the results obtained, it was concluded that the increase in the air-drying temperature affects the soybean quality and crude oil extracted, being this effect enhanced with the storage time; the soybean and crude oil quality decline with an increase in the air-drying temperature and storage time; the air temperature of 40 ºC has the least effect on the quality of soybean grains and crude oil extracted.

A secagem de produtos agrícolas é largamente utilizada no mundo, para o controle e a manutenção da sua qualidade. Em se tratando de plantas medicinais e aromáticas, esta importância cresce ainda mais. Assim, o presente trabalho objetivou avaliar a cinética de secagem de folhas de aroeira (Schinus terebinthifolius Raddi), bem como ajustar diferentes modelos matemáticos aos valores experimentais de razão de umidade. As folhas foram colhidas com teor de água inicial de 65% (b.u.), sendo submetidas à secagem sob condições controladas de temperatura (40ºC, 50ºC, 60ºC e 70ºC), até o teor de água aproximado de 10% (b.u.). Seis modelos matemáticos foram ajustados aos dados experimentais citados na literatura específica e utilizados para a representação do processo de secagem de produtos agrícolas. Com base nos resultados obtidos, pôde-se concluir que os modelos de Henderson & Pabis modificado e Midilli foram os que melhor representaram a cinética de secagem das folhas de aroeira. O aumento da temperatura do ar de secagem promoveu maior taxa de remoção de água do produto. O coeficiente de difusão efetivo aumentou com a elevação da temperatura, e sua relação com a temperatura de secagem pôde ser descrita pela equação de Arrhenius, que apresentou energia de ativação para a difusão líquida, durante a secagem, de 74,96 kJ mol-1, para as folhas de aroeira.

The drying process of agricultural products is extensively used worldwide for controlling and maintaining their quality. For medicinal and aromatic plants, this importance increases even more. Thus, this study aimed at evaluating the drying kinetics of Schinus terebinthifolius Raddi leaves, as well as adjusting different mathematical models to the experimental values of moisture ratio. The leaves were harvested with initial moisture content of approximately 65% (w.b.) and submitted to the drying process under controlled conditions of temperature (40ºC, 50ºC, 60ºC and 70ºC), up to the approximate moisture content of 10% (w.b.). Six mathematical models were adjusted to the experimental data cited at the specific literature and used to predict the drying process of agricultural products. According to the results obtained, it was concluded that the modified Henderson & Pabis and Midilli models were the ones that best represented the drying kinetics of S. terebinthifolius leaves. The temperature increase of the drying air promoted a higher rate of water removal from the product. The effective diffusion coefficient increased with the temperature elevation, and its relation to the drying temperature fitted the Arrhenius equation, which presented activation energy for the liquid diffusion, during the drying process, of 74.96 kJ mol-1, for S. terebinthifolius leaves.

O objetivo do presente trabalho foi avaliar o efeito da variação do teor de água na contração volumétrica, dimensões características e forma dos frutos de mamona durante a secagem. Foram utilizados frutos colhidos com teor de água de 2,50 (b.s.), secos à temperatura de 40ºC até o teor final de 0,11 (b.s.). O tamanho dos frutos foi determinado por meio da variação do volume e a forma foi analisada pela esfericidade e circularidade. A contração volumétrica dos frutos foi determinada pela relação entre o volume em cada teor de água e o volume inicial. Com base nos resultados, concluiu-se que a forma dos frutos de mamona é influenciada pela redução do teor de água, promovendo redução da esfericidade e circularidade. As dimensões características (comprimento, largura e espessura) e o diâmetro geométrico médio dos frutos sofrem redução de suas magnitudes com a redução do teor de água. A redução do teor de água influencia a contração volumétrica unitária e da massa dos frutos de mamona, provocando redução de seus valores em 46,0 e 63,0%, respectivamente. O modelo polinomial, dentre aqueles testados, foi o que melhor representou o fenômeno da contração volumétrica da massa e unitária dos frutos de mamona.

The objective of this work was to evaluate the effect of moisture content on castor bean fruit shrinkage, dimensional characteristics and shape during drying. Castor bean fruits were harvested with 2.50 (d.b.) moisture content and dried at 40ºC up to final moisture content of 0.11 (d.b.). The size of the fruits was determined according to the shrinkage rate and the shape analyzed through the sphericity and circularity method. Castor fruit shrinkage was determined by the ratio between its volume with respective moisture content and its initial volume. Based on the obtained results, it can be concluded that the shape castor bean fruits is influenced by reduction in moisture content promoting the sphericity and circularity values as the moisture content is reduced. The dimensional characteristics (length, width and thickness) and the mean geometric diameter values of the fruits are reduced as the moisture content is reduced. The moisture content reduction influenced unit volumetric shrinkage and fruit mass, resulting in reduction of 46.0 and 63.0%, respectively. The polynomial model, among all tested, best fit the shrinkage phenomenon of castor bean fruits.
